For those who have tasted the classic preparation of gnocchi, it is evident that it is almost impossible to describe the flavors and consistency.   These small dumplings are one of the oldest preparations in the history of food, recorded in cookbooks as far back as the thirteenth century.  Gnocchi is more common in Northern Italy but can be found in other regions of Italy as well.
 
Executive Chef Michael Cirafesi has been preparing gnocchi from scratch for over 15 years.  Many who have tasted his version describe them as soft, light pillows full of flavor. Come prepared to participate as Michael teaches you how to prepare several varieties of this old and traditional recipe perfect for the summer months.
 
As always, with a glass of Prosecco in hand, you get to learn, ask questions and, of course, taste!
